CHEF GIANNI AUDIERI

Gianfranco Audieri was born in Milan in 1937. He attended school in Lausanne, Switzerland to learn French and French cooking. Gianni then worked in the Channel Islands and London before jumping into a cruise ship's kitchen where he spent almost two years between New York, the Caribbean and South America.

Since that time, private clubs and upscale restaurants have formed the bulk of Gianni's career. For several years Gianni worked for Holiday Inn Resorts as a manager and consultant.

While Gianni strives to keep Fior offerings authentically Italian, he also takes advantage of native products due to availability. Today, the Fior Menu presents about 20 varieties of pasta and eight veal dishes with emphasis on traditional Italian food rather than American-Italian
